Ingredients
- 1 chilli pepper (s), jalapeno or other fresh ones
- 0.5 ½ cup cheese, grated
- 6 tortilla (s) (preferably corn tortillas)
- 1 large tomato (s), pitted, finely chopped
- 3 tablespoon spring onion (s), finely chopped
- 1 tablespoon coriander greens, finely chopped
- 1 chicken breast, cooked and shredded, guacamole, salsa fresca

- Cut the chilli pepper lengthways, remove the core, remove the membrane and cut finely
- Sprinkle half of the tortilla with cheese, top with chili, spring onions, cooked chicken, tomatoes and basil. Fold up and heat in a medium-hot pan for 3-4 minutes - turn once.
- Remove from the pan and keep warm in the oven.
- Slice open once and serve with guacamole and salsa fresca.
