Ingredients

  • 1 onion (s)
  • 2 cloves garlic)
  • 1 piece (s) ginger
  • N / A soy sauce
  • Rice wine, optional
  • 2 liters vegetable broth or chicken broth
  • miso paste, approx. 1 - 2 tablespoon
  • 300 g ramen noodles without e
  • Oil for frying

For the topping:

  • 1 spring onion (s)
  • some mushrooms, e.g., enoki, shiitake or porcini mushrooms
  • 250 g chicken breast
  • sesame oil
  • Chilli flakes
  • 4 egg (s)

Instructions

  1. Finely chop the onion, ginger and garlic and fry in a saucepan with a little oil. Deglaze with soy sauce and stock and bring to a simmer. Add the miso paste - preferably through a small sieve, as it is difficult to dissolve. Season with a little rice wine and soy sauce. The broth can be used directly or simmer for another 10-20 minutes.
  2. Cook the pasta separately according to the instructions on the packet. Do not add to the broth.
  3. Now prepare the toppings. Cut the spring onion. Clean and fry the mushrooms. Marinate the chicken breast, e.g., with soy sauce and oil, and fry. Boil the eggs for 7 minutes and then place them in ice water so that they are still nice and soft when serving.
  4. Put the pasta in the serving bowls. Then pour in the broth and spread the toppings on top. The toppings can be varied as you like, depending on what you have at home.
