- 1 tablespoon fried onions
- 1 slice ham, cooked
- 1 teaspoon chives
- 50 ml milk
- salt and pepper
- 1 teaspoon clarified butter, for frying

- Whisk the eggs with the milk, chives, fried onions, pepper and salt vigorously.
- Heat the clarified butter in a medium pan and add the egg mixture.
- Chop the boiled ham and sprinkle it on the egg mixture.
- Let the lid rest on a medium heat until the egg mixture is cooked through.
- Place on a plate and fold in the middle once.
- A slice of toast and tomato salad goes well with it.
