Quick Paella with Prawns and Bell Pepper

Classic Spanish paella includes several types of seafood and other ingredients. This quick paella is made with prawns, bell peppers, and green peas.

Ingredients

  • Smoked chorizo ​​sausages (sliced) – 120 g
  • Frozen green peas – 1 glass
  • Large shrimps (boiled, peeled) – 230 g
  • Bulgarian red pepper (cut into circles) – 1 pc.
  • Long grain rice – 1 cup
  • Extra virgin olive oil – 2 tbsp
  • Onions (cut into strips) – 1 pc.
  • Fish broth – 3.5 cups
  • Saffron stigma – 1/4 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Chopped parsley for serving

Directions

  1. Heat olive oil in a large skillet over medium heat. Put the onion and red pepper into the pan, fry, stirring occasionally, for about 2 minutes.
  2. Then add sausages and rice, cook for about 1 minute.
  3. Add fish broth and saffron to the pan and bring to a boil. Reduce heat, cover skillet with a lid, and cook rice, stirring occasionally, for about 10 minutes, until semi-soft.
  4. Add green peas and shrimps to the pan, season with salt and pepper to taste, cover the pan and cook for another 5 minutes, until the rice is soft.
  5. Place paella on warm serving bowls, sprinkle with chopped parsley, and serve immediately.
