Quickly Marinated Kebab

Shouldn’t we go for a picnic? .. But what a picnic without a barbecue!

Servings: 8

Ingredients

  • Pork (neck) or lamb (always fresh meat) – 2 kg
  • Onions – 1 kg
  • Bay leaves – 2-3 pcs. (taste)
  • Ground black pepper – 0.5 teaspoon (to taste)
  • Salt – 2 tbsp (to taste)
  • Saffron (powder) (optional) – 1 pinch

Directions

  1. Peel and wash onions. Cut half the onion into rings. Grind the other half in a blender (or meat grinder) into a gruel.
  2. Wash the meat, cut into portions.
  3. Put the meat in a bowl (do not use aluminium dishes), salt and pepper. Add onion. Mix everything well by hand. Marinate the meat for about 60-90 minutes (that is, while we are engaged in barbecue and the firewood burns out).
  4. String pieces of pork on skewers at a short distance from each other, mixed with onions, so that during the cooking process the meat is fried evenly on all sides.
  5. Place the skewers on the grill at a minimum distance from the coals. Fry kebabs on the grill over hot coals, without flame, until tender, periodically turning the skewer, until golden brown (for 15-20 minutes).
    To determine the readiness of the kebab, you can make a longitudinal cut with a knife on one of the meat pieces – if clear juice appears from the cut, then the kebab is ready.
