Preheat the oven to 170 ° C fan oven.
Briefly beat the sugar and eggs until frothy. Add the vanilla sugar, lemonade, oil, flour, baking powder and vanilla flavor and stir until a homogeneous mixture is formed.
Divide the dough into 6 bowls in equal amounts if possible and color the dough in the 6 colors of the rainbow with food coloring.
Grease a 26 or 28 springform pan. So that the rainbow cake gets its pattern, first put a blob of about 1 tablespoon of one color in the center of the springform pan. Put a blob of the next color in the center of the blob and continue until there is no batter left. It looks most beautiful when you keep the order of the colors of the rainbow blue, green, yellow, orange, red and purple.
Bake at 170 ° C for 50-60 minutes and use the stick test to check whether the cake is cooked. Let the cake cool down. Mix the powdered sugar and a little lemon juice and cover the cake with the icing.
Tip: To bake a whole sheet of rainbow cake, you have to double the ingredients and make 2 or more dots so that the dough is spread over the whole sheet.
