Ingredients

  • 2 zucchini
  • 1 eggplant (s)
  • 2 cloves garlic)
  • 1 vegetable onion (s)
  • 3 tablespoon olive oil
  • salt and pepper
  • 2 tablespoon tomato paste
  • 1 can tomato (s)
  • 2 teaspoons vegetable stock
  • 2 tablespoon olives, black
  • 150 g feta cheese or feta cheese
  • thyme
  • rosemary

Instructions

  1. Preheat the oven to grill setting. Clean, wash and cut the vegetables. Peel and roughly dice the onion and garlic.
  2. Heat the oil in a large pan and fry the vegetables. Fry the onion and garlic briefly. Add tomato paste and tomatoes and season. Add herbs and broth and bring to the boil. Cover and simmer for 8-10 minutes, then add the olives.
  3. Spread everything in a baking dish and grate the cheese over it. Gratinate under the grill for 4 - 5 minutes. It goes well with baguette and red wine.
