Ratatouille with Potatoes without Cheese

Ratatouille is a delicious French vegetable dish. The difference between this recipe and the traditional one is that in addition to eggplants, zucchini, and tomatoes, potatoes are used, and there is no cheese at all. It turned out satisfying and tasty!

Ingredients

  • Eggplant – 200 g
  • Zucchini – 200 g
  • Tomatoes – 200 g
  • Sweet bell pepper – 150 g
  • Potatoes – 150-180 g
  • Olive oil – 2 tbsp
  • Garlic – 1 clove
  • Thyme – 1-2 branches
  • Salt to taste
  • Black pepper – to taste

Directions

  1. Prepare food for ratatouille.
  2. Mix vegetable oil with squeezed garlic. Leave it on for a couple of minutes to let the oil sit and make it more fragrant.
  3. Wash the zucchini and eggplant, cut the tails, and cut the vegetables into slices about 0.7 cm thick.
  4. Slice peeled potatoes, bell peppers, and tomatoes in the same way.
  5. Place all vegetables in a baking dish, alternating between eggplant, courgette, tomato, and potato. Layout the vegetables as if standing. Season with salt and pepper to taste.
  6. Pour the vegetables with aromatic olive oil and add thyme sprigs. Place the ratatouille in the oven at 220 degrees.
  7. The dish is ready in 20-25 minutes. Can be served at the table.
