Rice Casserole with Zucchini and Cheese

According to this recipe, zucchini and rice casserole turns out to be very juicy, tasty, and quite healthy.

Ingredients

  • Zucchini – 1 pc.
  • Rice – 80 g
  • Bulb onions – 1 pc.
  • Eggs – 2 pcs.
  • Hard cheese – 70 g
  • Olive oil – 1 tbsp
  • Salt – 3 g
  • Ground black pepper – 3 g

Directions

  1. Prepare all required ingredients.
  2. Rinse the rice several times under running water. After that, in a saucepan or saucepan, pour the rice with cold water (300 ml) and send to the fire. When the water boils, reduce the heat to a minimum and cook the rice for 20 minutes. If after the specified time there is still water, drain it.
  3. Dice the onions.
  4. Pour olive oil into a frying pan, put onion and fry it for 2-3 minutes over medium heat, stirring occasionally.
  5. Grate the zucchini on a coarse grater. (If the zucchini is not young, be sure to peel it.)
  6. Add fried onions, boiled rice and eggs to the zucchini.
  7. Season with salt and pepper.
  8. Grate hard cheese on a coarse grater. Put half of the grated cheese to the rice with zucchini. Mix.
  9. Grease a baking dish (I have a ceramic one) with olive oil. Put the prepared mass into the mold. Spread the remaining cheese on top.
  10. Place the dish in the oven (place the ceramic dish in a cold oven) and cook the rice casserole with zucchini and cheese for 20-30 minutes at 190 degrees.
  11. Serve the rice and zucchini casserole to the table as a side dish or as an independent dish.
