Rice Croquettes with Cheese (in the Oven)

Rice croquettes are often pan-fried or deep-fried. According to this recipe, rice croquettes with cheese are baked in the oven, so they are not too fatty and very appetizing, with a ruddy crispy crust. Hard cheese is added to the croquette rice, and a piece of mozzarella is placed inside each ball. It turns out very tasty, especially when warm when the cheese is melted. These croquettes can be a good snack or main course.

Ingredients

  • Round grain rice – 200 g
  • Mozzarella cheese – 150 g
  • Hard cheese – 50 g
  • Bread crumbs – 60 g
  • Eggs – 2 pcs.
  • Salt to taste
  • Ketchup or sour cream – to taste

Directions

  1. We prepare the necessary products. Rice for croquettes is well suited for round, boiled rice is more viscous and croquettes keep their shape well.
  2. Rinse the rice, put it in a saucepan, and pour 400 ml of water, add some salt. Bring the rice to a boil and cook over low heat for 15-20 minutes, until it is ready and the moisture is completely absorbed. Let the cooked rice cool.
  3. Rub the hard cheese on a medium grater and add to the cooled rice. If there is not enough salt, add salt to taste. Also, add 1 egg to the rice and stir until smooth.Cut the mozzarella into small cubes.
  4. With our hands moistened with water, form a cake from the rice mass. Put a piece of mozzarella in the middle of the cake.We wrap the edges of the cake and form a ball.
  5. This is how we form all the rice croquettes. I got 11 pieces. Turn on the oven to heat up to 200 degrees.
  6. Whisk the second egg lightly, dip each ball of rice into an egg, then roll in breadcrumbs.
  7. Cover the baking sheet with parchment and layout the croquettes.We bake rice croquettes in an oven preheated to 200 degrees for 20-25 minutes.
  8. Rice croquettes with cheese are ready.

These croquettes can be served with ketchup or sour cream. Enjoy your meal!
