Rice With Chicken Liver and Mushrooms

Rice with chicken liver and mushrooms is a great alternative to the usual pilaf, because the cooking principle is similar, but it takes much less time. Chicken liver is used instead of meat, and it cooks much faster. Among other things, rice with liver and mushrooms turns out to be delicious and very satisfying.

Ingredients

  • Rice – 180 g
  • Champignons – 200 g
  • Chicken liver – 150 g
  • Bulb onions – 2 pcs.
  • Fresh parsley – 4-5 branches
  • Garlic – 2 cloves
  • Vegetable oil – 5 tbsp
  • Salt to taste

Directions

  1. We prepare all the necessary products.
  2. Rinse the greens and chop finely. Peel and chop the garlic. Peel the onion into small cubes or, if the onions are small, into quarters of rings.
  3. We wash the liver and cut into small pieces. There is no need to wash the champignons, it is enough to wipe them with a paper napkin and remove particles of earth, if any. Also, the mushrooms should not be washed so that they do not release a lot of liquid when frying. Cut the mushrooms into small slices.
  4. We wash the rice thoroughly, changing the water several times until it becomes transparent. Then we drain the water.
  5. Pour half of the vegetable oil into a cauldron (or a thick-walled pan) and heat it up. Fry the onions over medium heat until transparent, for a couple of minutes.
  6. Add rice to the onion and fry for another 2 minutes, stirring with a spatula, so that the rice is evenly covered with oil. Add chopped garlic there.
  7. Pour warm water into the cauldron (you can use boiled water from a kettle). Water must be poured so that it is about 1.5 cm higher than the level of rice and onions. I needed about 100 ml of water As soon as the water boils, cover the cauldron (or saucepan) with a lid, reduce the heat and cook the rice for 20-25 minutes. Salt.
  8. Meanwhile, heat the remaining vegetable oil in a frying pan. Fry the liver over medium heat with constant stirring for about 5 minutes. Salt.
  9. When the rice has completely absorbed all the water, add the fried liver to it. Stir, cover, reduce the fire to the very minimum.
  10. Then quickly, literally for 2-3 minutes, fry the mushrooms in the same oil in which the liver was fried
  11. We put mushrooms on rice with liver.
  12. Mix and add the chopped greens. Cover and remove from heat.
  13. Serve hot rice with chicken liver and mushrooms.
