Rice with Spinach

An unusual, but at the same time simple and quick recipe for a side dish – tender and delicious rice with spinach.
How to cook spinach rice:
Ingredients
- Long grain rice – 300 g
- Butter – 50 g
- Salt
- Bulb onions – 1 pc.
- Spinach – 100 g
- Vegetable oil
Directions
- We wash the rice under running warm water about 8 times until the water becomes clear.
- Cover a saucepan with a thick bottom with foil. Pour rice there and fill it with water (water should be 1 phalanx of a finger above the surface of the rice).
- Cover with a lid and set over medium heat. Add 0.5 teaspoon of salt and cook for 15 minutes. After a while, remove from heat and, without opening the lid, set it aside for another 10 minutes.
- Thoroughly rinse the spinach with cold water and dry by placing on napkins or a towel.
- Cut off the stems and cut the spinach leaves into strips.
- Chop the onion very finely or chop it in a blender.
- Pour vegetable oil into the pan and add butter. We send the onion into cold oil and put on medium heat. When the onion starts to boil, salt it and cook until all the liquid has evaporated (the onion should not be golden).
- We send spinach there and mix. Add another piece of butter. Reduce heat and wait 2-3 minutes for the spinach to decrease in volume.
- Transfer the onion and spinach to a separate plate and salt to make it slightly saltier than the taste.
- Put the rice in a deep bowl, put the spinach and onion on top, and distribute it all over the rice. Let stand for 3 minutes.
- We mix.
- Rice with spinach is ready. Enjoy your meal!
