Rice with Squid in Tomato Sauce

Diversify your meal with a new dish – cook rice with squid in tomato sauce. It is not only tasty, satisfying and healthy but also fast.

Ingredients

  • Rice – 100 g
  • Squids – 320 g (2 pcs.)
  • Onions – 60 g (1 pcs.)
  • Tomato paste – 50 g
  • Salt – 0.5 teaspoon
  • Provencal herbs – 1 teaspoon
  • Olive oil (for frying) – 3 tbsp

Directions

  1. Let’s prepare food for cooking rice with squid in tomato sauce.
  2. Rinse the rice in several glasses of water until the liquid is transparent. Put the cereal in a saucepan, fill it with a liter of water, add salt, and cook over medium heat. When the water boils, reduce the heat to low. After 20 minutes from the moment of boiling, remove the pan from the stove, salt the remaining water – the rice is ready.
  3. While the rice is cooking, let’s get to the squid. We will clean each carcass inside and outside, thoroughly wash it in running water.
  4. In a separate saucepan, bring a liter of water to a boil. Dip the squid carcass into boiling water for 15 seconds (no more) and remove it with a slotted spoon. Boil the second squid in the same way.
  5. Cut the finished squid into thin rings.
  6. Peel the onion and cut into half rings.
  7. Heat oil in a frying pan and put onion. Fry over medium heat until light golden.
  8. Let’s add squid rings to the onion.
  9. Immediately add the tomato paste. Let’s mix.
  10. Add hot rice to the squid and onions, mix everything.
  11. Add Provencal herbs, pepper, salt. Stir and remove from heat after 3 minutes.
  12. Immediately place the cooked rice with squid in tomato sauce on plates.
