Ingredients

  • 1 chicken, (roast chicken) approx. 2 kg
  • salt and pepper
  • 2 tablespoon herbs Provence
  • 2 tablespoon butter, melt
  • 5 cloves garlic
  • 3 large oranges, untreated
  • oil
  • 120 ml chicken broth

Instructions

  1. Season the chicken with salt and pepper inside.
  2. Halve an orange and stick it in the chicken along with the garlic cloves. Tie up the chicken and brush with butter. Season with herbs, salt and pepper.
  3. Grease a baking sheet with oil and place the chicken on it. Quarter 2 oranges and place on the baking sheet. Bake in the preheated oven at 220 degrees for about 20 minutes, then reduce the heat to 180 degrees and bake for another hour. Douse occasionally with the resulting juice.
  4. Then take the chicken out and wrap it in aluminum foil and let it rest for about 15 minutes.
  5. Pour the gravy into a saucepan and add the chicken broth. Bring the whole thing to the boil and reduce.
  6. Serve with chicken and potatoes.
