Ingredients
- 400 g rocket
- 1 radicchio
- 250 g cheese, oat cheese roll
- 500 g cherry (s) (sweet cherries)
- 8 tablespoon olive oil
- 6 tablespoon port wine
- 4 tablespoon vinegar (red wine vinegar)
- 4 tablespoon maple syrup
- Salt and pepper, from the mill
- 150 g Parma ham, thin slices

- Here I present you my absolute favorite salad for the cherry season !! Clean and wash the rocket. Halve the radicchio and remove the stalk. Cut the radicchio into strips and place in lukewarm water for 10 minutes so that the bitter substances escape. Cut the goat cheese into slices approx. 2 cm wide. I don`t recommend the creamy cream cheese, but the somewhat camembert-like roll! Wash, stone and halve the cherries. Mix the olive oil, port wine, vinegar and maple syrup well and season with salt and pepper. Add cherries. Let everything marinate for about 20 minutes. Arrange rocket, radicchio, Parma ham and goat cheese decoratively on a plate and sprinkle evenly with the dressing.
