Dough:
Stir margarine and sugar until foamy, stir in soy flour, soy milk and salt. Finally, gradually add the flour mixed with baking powder and knead everything well with the cocoa. Pour two thirds of the batter into the springform pan (28 cm diameter), do not pull the edge.
Filling:
Mix tofu cubes and soy milk in a blender to form a quark. Stir all ingredients together and place on the dough base.
Pluck the remaining third of the dough over it as a fine crumble. Alternatively, figures or names or congratulations cut out with cookies.
Baking time: 60 - 70 min at 175 ° C top / bottom heat.
Do not take out of the mold immediately, let it cool down first.
Blueberry Quark Cake:
Make the kneading dough without cocoa. Put a glass of blueberries and correspondingly less soy milk in the filling. Prepare as above.
