Ingredients

  • 140 g flour
  • 40 g powdered suar
  • 1 pinch (s) salt
  • 1 packet vanilla sugar
  • 0.5 ½ lemon (s), untreated, remove the zest it
  • 110 g butter, soft
  • 1 egg white
  • 40 g pistachios, chopped
  • 40 g cranberries, cut into small pieces
  • Sugar to roll over

Instructions

  1. Put the flour, powdered sugar, salt, vanilla sugar and the finely grated lemon zest in a bowl. Add the softened butter. Then add the egg white, pistachios and cranberries and knead everything with your hands to form a smooth and soft dough. If necessary, add a little more flour, the dough should not stick.
  2. Then divide the dough in half and form rolls. Wrap each roll in cling film and place in the freezer for about 1 hour.
  3. Preheat the oven to 160 ° C fan oven. Remove the dough from the foil and roll it in a little sugar, pressing it in lightly. Cut the rolls into 5 mm thick slices with a sharp knife and place on a baking sheet lined with baking paper.
  4. Then bake for 12 minutes. The sablés should stay light. Take the finished sablés out of the oven and let them cool on the tray.
  5. These cookies are eye-catching and can be baked all year round.
  6. Depending on your taste, you can also mix about 1 tablespoon of crushed pink pepper berries with the sugar and roll the rolls in it.
