Salad with Red Fish, Avocado, Rice and Cucumber

The salad with red fish, avocado, rice, and cucumber turns out to be very tasty, tender, and satisfying. All the ingredients in it are ideally combined with each other, which makes the taste simply unforgettable. And the original serving of the dish will surely give your guests a great mood!

Ingredients

  • Lightly salted salmon (fillet) – 250 g
  • Avocado – 200 g
  • Round grain rice – 120 g
  • Carrots – 150 g
  • Cucumber – 130 g
  • Red onion – 100 g
  • Eggs – 3-4 pcs.
  • Lemon – 30 g
  • Mayonnaise – 200 g
  • Green onion – 5-6 feathers
  • Fresh dill – 4-5 branches
  • Fresh parsley – 2-3 sprigs
  • Sugar – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Bulgarian pepper – 20 g (for decoration)

Directions

  1. Rice is thoroughly washed until the water becomes clear.
  2. Then we put the rice in a colander and let it dry for 1 hour.
  3. At this time, boil the carrots until tender (20-25 minutes).
  4. Boil hard-boiled eggs (10 minutes after boiling water).
  5. Pour rice with 250 ml of water, cover with a lid, and put on the heating. Bring to a boil.
  6. Remove the lid and cook the rice over low heat for 8-10 minutes. Then turn off the heating, cover the saucepan with a lid again and let the rice stand for 10 minutes.
  7. Squeeze 1 tablespoon of lemon. a spoonful of juice. Pour 1/2 teaspoon of salt and 1 teaspoon of sugar into it. We mix.
  8. Pour the lemon juice with salt and sugar into the rice and stir. Let the rice cool down.
  9. Grind the greens without mixing with each other. We leave a few feathers of green onions to decorate the finished salad.
  10. Peel the red onion. Cut half the onion into small cubes. Cut off 1 onion ring. Cut the remaining onion into half rings.
  11. Peel the avocado, remove the seed. Cut the avocado into cubes and sprinkle with lemon juice.
  12. We peel the eggs and rub them on a coarse grater.
  13. Combine eggs, 1 tablespoon. a spoonful of mayonnaise and chopped green onions.
  14. Cut the cucumber into cubes.
  15. Cut the red fish into small cubes.
  16. Peel and rub the carrots on a coarse grater
  17. We will serve the salad in the form of fish. To do this, put a layer of rice in an oval dish or plate, forming the body of the fish. Lubricate with mayonnaise.
  18. We spread the fish with the second layer, evenly distributing it over the rice.
  19. Sprinkle the fish with dill, parsley, and red onions. We leave a little dill for decoration.
  20. We lay a layer of cucumbers.
  21. Lubricate with mayonnaise.
  22. Spread a layer of avocado and grease with a thin layer of mayonnaise.
  23. We lay a layer of eggs combined with mayonnaise and chopped green onions. Salt and pepper.
  24. With the last layer, layout the grated carrots and grease with mayonnaise.
  25. In order to depict the fish, I used green onions, red onions, dill, and a slice of bell pepper. Salad with red fish, rice, avocado, and cucumber is ready! We send it to the refrigerator for impregnation for 2-3 hours.
