Salmon Baked with Couscous and Vegetables

The salmon in this dish is baked on a “hat” of couscous and vegetables, which allows the fish to fully enjoy their aromas during the cooking process.

Servings: 4

Ingredients

  • Couscous with spices (cooked according to package instructions) – 150 g
  • Salmon fillet – 4 pcs. (120 g each)
  • Zucchini (cut into thin strips) – 1 pc.
  • Carrots (cut into thin strips) – 1 pc.
  • Tomato (cut into thin strips) – 1 pc.
  • Lemon (cut into thin slices) – 1 pc.
  • Spices for fish – 2 teaspoon
  • Salt – 1/2 teaspoon.
  • Ground black pepper – 1/2 teaspoon.
  • Olive oil – 2 tbsp
  • Lemon wedges for garnish

Directions

  1. Turn on the oven to preheat to 200 degrees.
  2. Put couscous on 4 large sheets of parchment or foil. Put 1 slice of salmon fillet on the couscous. Top with zucchini, carrots, tomato, and lemon. Sprinkle with spice mixture, salt, and pepper. Drizzle with olive oil and wrap paper (foil) to form a bag. Place the bags on a baking sheet and bake until tender, about 20-25 minutes.
  3. Transfer the finished dish to serving plates (one bag for each), gently unfold and serve immediately without removing the bag.
