Ingredients

  • 4 piece (s) salmon, ready to cook approx. 150 g
  • 1 zucchini
  • Olive oil, for frying
  • 1 small cucumber (or ½ large)
  • 1 clove garlic
  • 3 stalks mint, possibly 4
  • 250 g yourt
  • salt and pepper
  • sugar

Instructions

  1. Wash the cucumber and roughly grate it with a grater. Peel the garlic and then press it. Wash the mint and cut very finely (put a few leaves aside for decoration). Mix everything together with the yogurt in a bowl. Season with salt, pepper and a pinch of sugar.
  2. Portion the salmon into three equal pieces. Cut the zucchini lengthways into twelve thin slices (with a slicer or a mandolin). Wrap the salmon in it. In a coated pan with a little oil, let the color take on both sides for a good two minutes and cook medium. First fry the side with the seam of the zucchini, so you close the salmon packet at the same time. Let rest for two minutes before serving, season with salt and pepper.

  4. Arrange the salmon parcel on a flat plate, place the mint tzatziki in a small bowl or glass, decorate with mint and serve with the salmon. Good Appetite!
