  • 1 glass black salsify (s)
  • 2 egg yolks
  • some flour
  • some butter
  • pepper
  • salt

Instructions

  1. Make a roux by heating some butter in a saucepan. Add flour and stir well. Now add the liquid from the salsify and stir quickly with the whisk so that no lumps are formed. Overturn the egg yolks. Season the sauce with salt and pepper.
  2. Then add the black salsify. Just warm up and serve quickly.
