Sauerkraut Soup with Pork, Chicken and Smoked Sausages

Recipe for sauerkraut soup based on the Czech dish “Zelnyachka”. Cabbage in Czech is zelí, hence the unusual name of this old stew. It is said that in Czech cuisine several types of meat can be used in one dish. I made a pork, chicken, and smoked sausages.

Servings: 4

Ingredients

  • Chicken fillet – 300 g
  • Pork – 180 g
  • Smoked sausages – 2 pcs.
  • Potatoes – 2 pcs.
  • Sauerkraut – 250 g
  • Bulb onions – 0.5 pcs.
  • Garlic – 1 clove
  • Sunflower oil – 70 ml
  • or lard – 70 g
  • Ground paprika – 0.5 teaspoon
  • Ground cumin – 0.25 teaspoon
  • Sugar to taste
  • Salt to taste
  • Water – 1-1.2 L

Directions

  1. We prepare products.
  2. Cut the pork and chicken fillet into large pieces.
  3. Cut the smoked sausages into pieces 1-1.5 cm long.
  4. In a frying pan, heat the sunflower oil or melt the lard. Put pork and chicken in a pan and fry over medium heat on all sides (about 10 minutes).
  5. Peel and finely chop the onion and garlic.
  6. Add sausages, onions and garlic to pork and chicken.
  7. Pour in paprika and fry for another 5 minutes.
  8. Put the fried meat with sausages in a saucepan. Fill with water so as to completely cover the contents of the pan. Salt. We put on fire and cook at low boil until the meat is tender (30-40 minutes).
  9. During this time, cut the peeled potatoes into slices.
  10. Remove the finished meat from the pan with a slotted spoon and set it aside for now. Add potatoes to a saucepan and cook for 5 minutes.
  11. Add cabbage, caraway seeds and sugar. Cook the potatoes until tender (about 5 minutes).
  12. We return the meat to the pan, add water to get the desired thickness of the soup (this is at your discretion). Bring to a boil and cook for 7 minutes. Let’s try. Add salt if necessary.
