Saute of Vegetables (In A Slow Cooker)

Summer, the season of fresh vegetables. Let’s cook a saute of vegetables for lunch in a slow cooker. If you freeze vegetables for the winter, you can enjoy summer abundance in winter.

Servings: 4

Ingredients

  • Eggplant – 2-3 pcs.
  • Tomatoes – 2-4 pcs.
  • Sweet pepper – 2-3 pcs.
  • Carrots – 1-2 pcs.
  • Bulb onions – 1-2 pcs.
  • Vegetable oil – 30 ml
  • Salt to taste
  • Sugar – 1 teaspoon (to taste)
  • Pepper to taste
  • Bay leaf – 1 pc.
  • Garlic – 2-3 cloves

How to cook a sauté of vegetables (in a slow cooker)

Directions

  1. Wash, peel, cut eggplants into cubes.
  2. Put the eggplant in a bowl, salt (1 tablespoon). Stir, leave for 15-20 minutes (during this time, bitterness will come out). Rinse with cold water.
  3. Wash zucchini, peel, cut into cubes
  4. Wash pepper, peel, cut into cubes or strips.
  5. Peel carrots and onions, wash, cut into strips.
  6. Wash the tomatoes, cut into cubes.
  7. Pour vegetable oil into the slow cooker bowl.
  8. Place all vegetables in a bowl.
  9. Season with salt, pepper, add sugar (optional), your favourite spices. You can also add chopped garlic. Mix everything.
  10. Turn on the “Stew” mode, cook sautéed vegetables in a slow cooker for 40 minutes.
  11. Saute of vegetables in a slow cooker is ready.
  12. The vegetable sauté can be served either warm or cold.
