Ingredients

  • 100 g butter
  • 3 egg (s)
  • 150 g suar, (brown if desired)
  • 200 g yourt, pure
  • 200 g flour
  • 2 teaspoons baking soda
  • 100 g hazelnuts or almonds
  • 2 tablespoon lemon peel
  • 2 tablespoon raisins or sultanas
  • 2 teaspoons cinnamon, (or even better 1 teaspoon cinnamon + 1 teaspoon gingerbread spice)

Instructions

  1. Melt the butter and let it cool. First beat the eggs + sugar until frothy - then whisk all liquid ingredients together well.
  2. Chop nuts + lemon peel in a blender or grind whole (a few pieces don`t do anything). Then mix all the dry ingredients well. If you like, add a pinch of salt. Just mix briefly into the liquid mixture until everything has combined.
  3. Grease the muffin tray and dust with flour / breadcrumbs / ground nuts - or put paper cases in it. Spread the muffin batter into the wells. Bake at about 180 ° C for about 20-25 minutes.
  4. If desired, dust with powdered sugar or cover with cinnamon, nut, rum, chocolate or other glaze.
  5. Variations:
  6. If you don`t like lemon peel + raisins, you can use grated chocolate instead of this - but then just fold in, do not mix.
  7. If you like cinnamon, you can use a little more of it - depending on your taste.
