Ingredients

  • 500 g mushrooms
  • 4 tablespoon spring onion (s), chopped
  • 1 red pepper (s)
  • 2 tablespoon parsley, chopped smooth
  • 1 garlic, crushed
  • 3 tablespoon vinegar (white wine vinegar)
  • 2 teaspoons mustard, coarse
  • Oil (olive oil)

Instructions

  1. Clean and quarter the raw mushrooms. With finely chopped spring onions and diced peppers.
  2. A dressing made from the crushed garlic clove, the finely chopped parsley, the vinegar, mustard and about (!) 80 ml olive oil (unfortunately I never measured it - everything has to be well coated with marinade).
  3. Let it marinate for at least three hours, or even better for six hours. By marinating, the mushrooms cook as if they had been fried / stewed.
  4. Delicious on an Italian starter plate.
