Serbian Beans with Smoked Sausages

Beans with smoked sausages, bell peppers, tomatoes, onions, and garlic are a simple Serbian dish. For its preparation, available products are used, but it turns out very tasty, aromatic, and satisfying.

Ingredients

  • Dry white beans – 1 cup
  • Smoked sausages – 300 g
  • Bulgarian red pepper – 1-2 pcs.
  • Tomatoes – 1-2 pcs.
  • Bulb onions – 1 pc.
  • Garlic – 1-2 cloves
  • Bay leaf – 1 pc.
  • Black peppercorns 4-5 pcs.
  • Spice mixture – 1 teaspoon
  • Ground black pepper – to taste
  • Salt to taste
  • Vegetable oil – for frying

Directions

  1. Prepare the ingredients for the Serbian beans. The spice mixture used in this recipe includes coriander, paprika, dried tomatoes, savory, basil, cumin, onion, garlic, red pepper, black pepper, and allspice. Instead of this spice mixture, you can add 1 teaspoon ground paprika or paprika and spices to your liking. If you use canned beans, this dish can be cooked much faster.
  2. In the evening, soak the beans in cold water and leave overnight. Then drain the water, rinse the beans.
  3. Pour the beans into a saucepan, pour in water in a 1: 2 ratio, and cook. When the water boils, add salt, add bay leaves and peppercorns, reduce heat and cook the beans, covered, until tender. Beans, depending on the variety, are cooked for 40-60 minutes.
  4. Peel and cut onions into half rings. Chop the peeled garlic with a knife.
  5. Cut the smoked sausages into slices a little over 1 cm thick.
  6. Wash the bell pepper, remove the stalk with seeds. Remove the skin from the tomato. To do this, cut the tomato crosswise, put it in boiling water for 2 minutes, then rinse it with cold water. After this procedure, the skin is easily removed.
  7. First fry the onion in a saucepan in vegetable oil until transparent, season with salt and pepper. Then add the garlic and fry the onion and garlic for 1 minute.
  8. Put the sausages in a saucepan with onions and garlic, fry until golden brown.
  9. Add the bell peppers, cut into strips.
  10. Cut the peeled tomato into cubes and add to the mixture.
  11. Season with spices, stir, bring to a boil and simmer under a lid over low heat for 5-10 minutes, so that the vegetables let out the juice and become soft.
  12. Then put the beans in a saucepan and pour in a little water in which they were cooked (about 2/3 cup).
  13. Simmer beans with smoked sausages and vegetables over low heat, covered for 15-20 minutes.

Very tasty Serbian beans are ready.
