Serum Okroshka with Ham, Potatoes and Cucumbers

Okroshka with whey, ham, potatoes, and cucumbers is a cold and appetizing soup that is simply indispensable on hot summer days. Today I propose to take whey as a basis, add sour cream as well – it will turn out incomparable. Do not spare greens for okroshka, it is very important here. Serve chilled.

Servings: 4

Ingredients

  • Ham – 250 g
  • Potatoes – 250-300 g
  • Fresh cucumbers – 200 g
  • Eggs – 2 pcs.
  • Green onions – 15 g
  • Fresh dill – 15 g
  • Sour cream – 3 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Lemon juice (optional, for serving) – to taste
  • Serum – 1.5 l

Directions

  1. Boil eggs for 10 minutes after boiling, potatoes – 15-20 minutes.
  2. Peel potatoes and eggs.
  3. Grate a third of the potatoes on a medium grater, cut the rest of the potatoes into small cubes. Little grated potatoes will give the dish a silky, delicate flavor.
  4. Cut the eggs into small cubes.
  5. Cut the cucumbers into small strips or cubes.
  6. Cut the ham into small strips.
  7. Cut fresh herbs as small as possible.
  8. Combine all chopped ingredients in a saucepan and stir.
  9. Add sour cream, salt, and a pinch of black pepper to the pan.
  10. Pour cold whey into a saucepan with all ingredients.
  11. Stir everything, chill for 1 hour in the refrigerator and serve.
