Shortcrust Cheese Dough Pies with Apples

These delicious juicy pies are an amazing combination of unusual shortcrust pastry with grated cheese and delicious apple filling! The addition of aromatic spices to the apple gives a special charm to the filling.

Servings: 4

Cook: 2 hours 30 minutes

Ingredients

For the dough:

  • Hard cheese – 100 g
  • Butter – 150 g
  • Flour – 250 g + for working with dough
  • Cold water – 50-60 ml
  • Salt – 1/4 teaspoon
  • Sugar (for sprinkling pies) – 1 tbsp
  • Cream 33% (for greasing pies) – 1 tbsp

For filling:

  • Apples – 550 g
  • Lemon juice – 2 tbsp
  • Sugar – 1.5 tbsp
  • Ground cinnamon – 1/2 teaspoon
  • Grated nutmeg – on the tip of a knife
  • Vanillin – on the tip of a knife

Directions

  1. Sift the wheat flour into a large container.
    Add salt and stir. Grate hard cheese on a fine grater and add to flour.
  2. Cut the chilled butter into small cubes and add here.
  3. Rub it all into butter crumbs with your hands.
  4. Gradually pouring cold water into the resulting crumb, knead a soft dough. You may need a little more water or a little less water. The dough should not stick to your hands too much.
    Form the dough into a ball, wrap it in plastic wrap and refrigerate for 1 hour.
  5. Rinse the apples, cut each into 4 pieces. Remove the core and cut the rind. Cut the peeled apple pulp into small cubes, add lemon juice, sugar, vanillin, cinnamon and nutmeg. Stir.
  6. Turn on the oven to heat up to 200 ° C.
    Lightly dust the work surface with flour to make it easier to work with the dough.
    Roll out the cooled dough into a layer 2-3 mm thick.
    Cutting out (you can use a cup), cut out circles from the dough (I have them 11 cm in diameter).
    Place 1-1.5 tablespoons of apple filling in the center of each dough.
  7. Roll the patties gently and pinch the edges of the dough tightly.
    Place the patties on a baking sheet lined with parchment paper.
  8. Using a silicone brush, brush the pies with cream and sprinkle with sugar.
  9. Place the pies in a preheated oven and bake until golden brown – this will take about 25-30 minutes.
  10. The finished pies must be removed from the oven, removed from the baking sheet and cooled.
    Serve cooled cheese pies with apples to the table.
