Shrimp, Avocado and Grissini Ceviche with Sesame Seeds

Peruvian ceviche is traditionally prepared with seafood. Moreover, quite often from raw. Therefore, it can be called an excellent source of protein. It would be a misconception that ceviche can only be tasted in restaurants.

Ingredients

  • shrimp – 150 g
  • jalapeno pepper – 1 g
  • avocado – 1 pc.
  • lime – 1 pc.
  • tomato – 2 pcs.
  • shallots – 1 pc.
  • avocado oil – 10 ml
  • canned beans – 15 g
  • garlic – 1 clove
  • radish – 20 g
  • pink peppercorns – 5 g
  • flour – 100 g
  • water – 50 ml
  • olive oil – 10 ml
  • sesame
  • yeast
  • powdered sugar
  • cilantro
  • sugar
  • salt to taste
  • black pepper – to taste

Directions

  1. Sift flour. Add water, olive oil, and stir. We dilute yeast, sugar, and salt with water. Add to the flour mass. We knead the dough.
  2. Roll out the dough into thin sausages, twisting slightly. We spread it on a baking sheet covered with a silicone mat. Lubricate with avocado oil. Sprinkle with sesame seeds and salt. We put in an oven preheated to 200 degrees for 10 minutes.
  3. Peel the shrimp and boil in salted water for 1-2 minutes. Cut the tomatoes and bake them in the oven. Chop shrimps and tomatoes. We mix.
  4. Dice the shallots and jalapenos. Add grated garlic, lime zest and juice, chopped avocado, cilantro, and powdered sugar.
  5. Mix the resulting mass with shrimps and tomatoes. Add avocado oil. Cut the radish into strips. Add red canned beans, parsley, avocado oil, pink pepper, and salt.
  6. Place the ceviche on a plate using the serving ring. Add bean and radish salad. Decorate with shrimps and grissini.
