Ingredients

  • 100 g butter, soft
  • 500 g shrimp (s), peeled and cooked
  • 2 bell peppers, yellow
  • 1 bell pepper (s), orange or red
  • 1 bunch spring onion (s)
  • 1 bunch coriander or parsley
  • 1 tablespoon oil
  • 200 ml poultry broth or vegetable broth
  • 2 cloves garlic
  • salt
  • pepper

Instructions

  1. Press the garlic cloves through the press and mix with the soft butter. Season to taste with salt and pepper and let it steep. Clean the peppers, remove partitions and seeds, rinse and cut into strips. Clean the spring onions, rinse and cut into rings. Rinse the coriander, pat dry. Chop the leaves with the delicate stems.
  2. Heat a wok (or large pan). Add half of the garlic butter with the oil and fry the pepper strips for 1-2 minutes, stirring constantly. Add the spring onions and fry for about 1 minute. Put the prawns with the broth in the wok and bring to the boil. Season everything with salt and pepper. Fold in the coriander. Cover the shrimp pan with the remaining garlic butter. Serve immediately in bowls.
  3. This goes well with rice or baguette. You can also use raw prawns, but this will increase the cooking time.
