Simple Sponge Cake “Mascarpone”

Ingredients

For a biscuit:

  • Eggs – 6 pcs.
  • Flour – 150 g
  • Sugar – 150 g
  • Vanilla sugar – 10 g
  • Baking powder – 5 g
  • Salt – 1 pinch

For the Mascarpone cream:

  • Cream (fat) – 600 g
  • Mascarpone cheese – 300 g
  • Sugar – 150 g
  • Vanilla sugar – 10 g

Directions

  1. First of all, we will bake a simple biscuit. Prepare a round shape, the dia of the shape is 26 cm. Cover it with parchment and brush with vegetable or butter. Combine flour (150 grams) and baking powder (5 grams).
  2. Break 6 eggs. Add a pinch of salt, vanilla sugar (10 grams), and granulated sugar (150 grams).
  3. Beat with a mixer until the mixture is white, fluffy, and firm.
  4. Sift the flour with baking powder in two steps, stirring gently from top to bottom each time without changing direction.
  5. The biscuit dough is ready, transfer it to a baking dish and flatten. Bake the biscuit for 40-50 minutes at 180 degrees (preheat the oven in advance). Check readiness with a wooden stick.
  6. Remove the finished biscuit from the oven, let cool for 10 minutes.
  7. Remove from the mold, remove the paper. Place on a wire rack or wooden board and rest for at least 6 hours.
  8. The biscuit has rested, cut it into 3 equal cakes, and start preparing the Mascarpone cream.
  9. Put 300 grams of cold mascarpone cheese in a mixer bowl, add 150 grams of sugar, 10 grams of vanilla sugar, and 600 milliliters of cold heavy cream (the cream must be at least 30% fat).
  10. Stir at a slow speed, then gradually increase the speed, beat until a fluffy, smooth and delicious cream is obtained.
  11. The sponge cake is ready, the cream is ready – start assembling a simple Mascarpone sponge cake. Place the crust, cut side up, on the cake assembly stand. Put a quarter of the prepared cream on the cake, smooth.
    Put the second cake layer, again a quarter of the cream, and the third cake layer with the smooth side up.
  12. Cover the sides and top of the cake with the fourth part of the cream.
    Smooth out and transfer to a platter where you will serve the cake to the table.
  13. Place the remaining cream in a piping bag with a toothed attachment and start decorating the simple Mascarpone sponge cake.
  14. Put the Mascarpone cake in the refrigerator for several hours, take it out an hour before serving and serve delicious and delicate Mascarpone cake to the sweet table.
