Ingredients

  • 500 g beef for sliced beef (steak for quick fryin)
  • 250 g fresh chanterelles or a can
  • 200 g mushrooms brown
  • 1 onion (s)
  • 100 ml red wine
  • 100 ml cream or 2 tablespoon creme fraiche
  • 250 ml water
  • salt and pepper
  • some flour and / or sauce thickener
  • some parsley
  • Paprika powder

Instructions

  1. Season the sliced beef and let it steep in the refrigerator for 2-3 hours. Then dust the beef with about 1 tablespoon of flour and mix well.
  2. Preheat the oven to approx. 100 degrees top / bottom heat. Sear the beef in a pan and place in the oven to keep warm.
  3. Fry the chopped onion and mushrooms in a hot pan and deglaze with red wine, cream and about 1/4 liter of water. Simmer for 5 minutes, then add the beef and, if necessary, bind the sauce with a sauce thickener or flour dissolved in cold water, garnish with parsley and serve immediately.
  4. There is also pasta, spaetzle or rice, depending on your taste.
  5. Depending on the season, you can also fry a little vegetables, e.g., peppers, fresh peas or broccoli.
  6. If the sliced beef is seared briefly until it`s done and then kept warm, it will stay tender. If you let it cook in the sauce, it will be dry and chewy!
