Snack Cake on a Festive Table

There has never been such a snack on my table! I have long wanted to try this snack cake recipe and surprise my guests! And everything turned out as I intended – delicious and beautiful! As it turns out, the fish snack cake is easy to prepare and the groceries are all available. Cook for health and please everyone at the festive table!

Ingredients

  • Puff pastry – 500 g (2 layers)

For filling No. 1:

  • Salted red fish – 200 g
  • Pickled cucumbers (gherkins) – 8 pcs.
  • Boiled eggs – 2 pcs.
  • Russian cheese – 70 g
  • Chopped fresh dill – 1 tbsp
  • Mayonnaise – to taste
  • Salt to taste
  • Ground black pepper – to taste

For filling No. 2:

  • Hot smoked mackerel – 200 g
  • Curd cheese – 150 g
  • Processed cream cheese – 100 g
  • Horseradish (not strong) – 3 tbsp

To cover:

  • Processed cream cheese – 100 g
  • Curd cheese – 150 g

For decoration:

  • Red fish – 50-100 g
  • Fresh cucumbers – 1-2 pcs.
  • Green onions – 1 small bunch
  • Green peas

Directions

  1. For the base, you need two layers of frozen puff pastry.
  2. We spread the dough, without defrosting, on a baking sheet covered with parchment. We send the baking sheet with the dough to the cold oven. We bake puff cakes at 180 degrees until golden brown.
  3. The cooled cakes are carefully cut (stratified) into three parts. We will use the middle part of the cake as the base of the cake, send the top (which was blown up by bubbles) to the center, and on top there will be a flat bottom of the puff cake.
  4. Preparing the first red fish filling. I have home-salted salted trout.
  5. Three cheese on a fine grater.
  6. Cut the fish from the skin and cut into a medium cube. We leave several thin plates of fish for decoration.
  7. Cut the gherkins into small cubes.
  8. We also cut the eggs into cubes.
  9. We mix all the ingredients of the filling with mayonnaise, ground pepper and chopped dill. Salt if desired.
  10. We connect the cakes that will go to the bottom. The filling-salad with red fish (it turned out very tasty) is evenly distributed over the cakes. The snack cake will turn out to be big, enough for everyone!
  11. Now we spread the uneven cakes on top, press them with our hands (do not be afraid to break them a little).
  12. We prepare the second filling with smoked fish. It’s a shame you don’t smell the smoked mackerel – it smells delicious!
  13. Mix curd cheese (I have homemade) with melted cream cheese and horseradish.
  14. We disassemble the mackerel into pieces, removing the bones. Half of all the fish was enough for me.
  15. We coat the cakes with cheese mass. Lay out the mackerel on top.
  16. Press down (lightly) with the last puff cakes. We cover with foil and put some light weight on top (for example, a light board). We remove the fish snack cake for a couple of hours in the cold. You can leave it overnight, let the cakes soak.
  17. Now let’s start decorating. This recipe is also good in that you can prepare the base in advance and decorate before serving.
  18. We mix two types of cheese.
  19. We distribute the cheese mass evenly over the surface of the cake, do not forget about the sides.
  20. Cut the cucumber into thin slices along the height of the cake.
  21. We glue the cucumbers on the sides of the cake.
  22. Green peas, onions and red fish flowers will complement the festive picture.
  23. It turned out appetizing, beautiful and incredibly tasty! Due to the puff pastry and several layers of filling, the effect of “snack napoleon” was obtained. Great! All guests are happy!
