Snack Sausages (Jerky) from Minced Pork

Minced pork sausages (jerky) are a very tasty appetizer that is not too difficult to prepare at home. And you just need a few ingredients: meat, salt, paprika. Of course, the cooking process is quite long, but you will know exactly what your jerky sausages are made of.

Ingredients

  • Pork (neck, pulp, shoulder) – 700-800 g
  • Nitrite salt – 7-8 g (0.75 teaspoon)
  • Table salt – 7 g (0.75 teaspoon)
  • Ground sweet paprika – 10 g (1 teaspoon)
  • Ground red hot pepper – 7 g (0.75 teaspoon)

Directions

  1. We prepare products.
    In the cooking process, we need high-quality parchment paper or a silicone mat and cling film. The sausages can be deposited with a cooking syringe, a cooking bag, or a tight bag rolled into a horn.
  2. Wash the meat thoroughly, dry it with a paper towel. We cut off hard films and excess fat. You can leave a little soft fat – the sausages will be juicier. Cut the meat into small pieces.
  3. Put the meat in a bowl, add two types of salt.
    (Nitrite salt is used for making homemade sausages, preserving them, flavoring them, and making them lightly colored.)
  4. Mix the meat and salt thoroughly. Cover the bowl with cling film and send the meat to the refrigerator for 1-3 days.
  5. Grind the meat with a meat grinder.
  6. Pour paprika and red hot ground pepper into the minced meat.
  7. Knead the minced meat thoroughly for 5 minutes.
    We turn on the oven to heat up to 50 degrees.
  8. Cover the baking sheet with parchment paper.
  9. I am using a cooking syringe. I fill it with minced meat and place the sausages across the entire width of the baking sheet. (The smaller the opening of your syringe, the drier and thinner the sausages will be.)
  10. We send the sausages to the oven and cook at a temperature of 50 degrees with the oven door ajar for 2 hours. Then turn the sausages over and dry for another 1.5-2 hours.
  11. Since I still have some minced meat left, I decided to make a few sausages thicker. As a result, these snack sausages are softer.
  12. From the declared amount of products, 220 g of finished sausages were obtained.
  13. Snack sausages (jerky) are ready.
