Ingredients

  • 250 g soba noodles
  • 0.5 ½ bunch spring onion (s), the green one
  • 1 handful peanuts

For the sauce:

  • 3 tablespoon peanut butter
  • 3 tablespoon soy sauce
  • 1 teaspoon ginger
  • 1 teaspoon sriracha sauce
  • 2 cloves garlic)
  • 0.5 ½ bunch spring onion (s), the white
  • 150 ml vegetable stock

Instructions

  1. Slice the spring onions and set aside the green part. Puree the white part together with the remaining sauce ingredients in the mixer to a smooth sauce and let it boil briefly in a small saucepan.
  2. Meanwhile, bring enough water to the boil in a large saucepan and cook the noodles al dente for 6 minutes. Pour into a sieve and rinse with cold water.
  3. Place in a large bowl with the sauce and mix everything well. Season with soy sauce and serve garnished with the green spring onion rolls and peanuts.
