Soybean Avocado Snack

A vibrant soybean avocado snack made with pesto, onions and spices. You can serve this snack with toasted bread slices, chips or pita bread.

Cook: 20 mins

Ingredients

  • Soybeans fresh or frozen (thawed) – 320 g
  • Medium avocado (peeled and chopped) – 1 pc.
  • Onions (finely chopped) – 1/4 cup
  • Fresh lime juice – 3 tbsp
  • Basil pesto sauce – 2 tbsp
  • Salt – 3/4 teaspoon.
  • Ground black pepper – to taste
  • Tomato (chopped) (optional)
  • Pita, chips, toast (optional)

Directions

  1. Place beans, avocado, onion, lime juice, pesto sauce, 3/4 teaspoon of salt and 1/4 teaspoon of black pepper into a bowl of a kitchen processor.
  2. Pulse until smooth. Transfer the mixture to a tight-fitting container, close and refrigerate until serving.
  3.  Before serving, remove the appetizer from the refrigerator, transfer to a serving bowl, top with chopped tomatoes (optional), sprinkle with salt and black pepper.

Serve this appetizer well with toast, pita or chips (to taste).
