Ingredients
- 500 g spahetti (durum wheat)
- 4 tablespoon olive oil
- 1 onion (s), finely diced
- 3 cloves garlic, finely diced, not pressed, otherwise it will be bitter
- 1 chilli pepper (s), dried, finely chopped
- 3 tablespoon herbs, Italian, dried
- 1 tablespoon oregano, dried or fresh
- 1 teaspoon, heaped sugar
- 0.5 teaspoon ½ salt
- some black pepper from the mill
- Curry powder
- 1 can tomatoes, chunky or pureed, 400 g
- 0.5 tube ½ tomato paste
- red wine
- Schmand
- some parmesan, freshly grated

- Cook the pasta in plenty of salted water until al dente, drain and rinse with cold water so that it does not stick.
- In the meantime, put the oil in a saucepan and fry the onion and garlic pieces in it. Then add the dried herbs and the chilli pepper and sauté as well. Now add the tomatoes and simmer for a few minutes with the lid closed. Now add a good dash of water, the spices and the tomato paste and stir everything thoroughly. Sometimes I add a dash of red wine, but I don`t have to.
- Sprinkle freshly grated parmesan on top.
- Tips: If you like, you can add a little sour cream or crème fraîche.
- If a whole chilli is too much for you, take a half first. Or you can leave them whole, cook them and take them out again before serving.
