Ingredients

  • 1 kg zucchini
  • 3 tablespoon olive oil
  • 300 g spahetti
  • 3 cloves garlic
  • 200 g cheese, (oat cheese)
  • 0.5 ½ bunch parsley
  • 6 sprigs peppermint
  • Salt and pepper, black from the mill

Instructions

  1. Cut the zucchini into slices and fry in portions with the garlic. Salt and pepper.
  2. Cook the spaghetti in salted water until al dente and mix with the zucchini.
  3. Put everything in a baking dish and top with sliced goat cheese.
  4. In the oven preheated to 200 ° for approx. 20 minutes.
  5. Chop the herbs together. After 20 minutes, take the casserole dish out of the oven, pour the herbs over it and mix everything well so that the cheese spreads in the spaghetti / zucchini mixture.
  6. Gratinate in the oven for another 10 minutes.
