Spaghettini with Goat Cheese, Rocket and Lime

Instructions
Cut or press the garlic into fine cubes. Wash the spring onion and cut into fine rings. Finely grate the peel of the lime and squeeze out the lime. Wash and clean the rocket and cut off the stalks. Cook the spaghettini in salted water.
Heat oil in a pan. Sauté the garlic and spring onions until translucent. Top up with vegetable stock and cream and simmer for 5 minutes. Stir in goat cheese and heat gently. Take the pan off the hob. Add the lime juice and zest, rocket and spaghettini to the sauce. Season with salt and pepper, stir and serve immediately.
