Ingredients
- 300 g spelled flour type 630
- 375 g wholemeal spelled flour
- 25 g flaxseed meal
- 2 teaspoons salt
- 1 ½ pack dry yeast
- 1 teaspoon sugar
- 2 m avocado (s)
- 1 dash lemon juice
- 0.5 teaspoon ½ baking soda
- 400 ml water, lukewarm

- Mix the flour, flaxseed, salt, yeast and sugar in a mixing bowl. Peel the avocado, puree the pulp with the lemon juice and baking soda and then add to the flour.
- Add the water while stirring and let the food processor knead for at least 5 minutes. The dough has to be quite runny. Cover and let the dough rise for approx. 1 hour with the oven light switched on, until the volume has increased significantly.
- Pour the dough into two loaf tins and place in the cold oven. Bake at 220 ° C (top / bottom heat) for approx. 20 minutes. Then set the heat to 180 ° C and bake the bread for another 40 minutes. The bread is ready when it sounds hollow when you knock on it.
