Spicy Chicken Carrot Noodle Soup

Spicy soup with carrot noodles is an unusual, tasty, and very bright first course, which also pleases with its benefits. Carrot noodles – why not, because it is delicious, juicy, and as easy as shelling pears. Red lentils and tender chicken meat add satiety to the soup. This soup turns out to be very rich in taste and aroma, you will certainly like it!

Ingredients
- Chicken drumsticks – 400-450 g (3 pcs.)
- Red lentils – 130 g
- Carrots – 200 g
- Canned tomatoes in their own juice – 250-300 g
- Butter – 30-40 g
- Ground sweet paprika – ½ teaspoon
- Ground turmeric – ½ teaspoon
- Ground nutmeg – ½ teaspoon
- Bay leaf – 2-3 pcs.
- Black peppercorns – 3-4 pcs.
- Ground black pepper – to taste
- Salt to taste
- Fresh cilantro – 30-40 g
Directions
- Pour chicken drumsticks in a saucepan with 1 liter of water, put bay leaves and black peppercorns. We put on the heating. Bring to a boil, remove the foam, salt to taste, and cook for 40 minutes over low heat.
- Put the chicken meat on a plate. Strain the broth, we need 700 ml of broth.
- Melt the butter in a saucepan.
- Cut the tomatoes into small random pieces.
- Put the tomatoes, all the spices in a saucepan and simmer for 2-3 minutes.
- Add lentils and fill with broth.
- Bring to a boil, cover, and simmer for 10-12 minutes.
- We clean the carrots. Using a Korean carrot grater, we make carrot noodles.
- Put the carrots in a saucepan and cook for 5-7 minutes.
- Grind the cilantro greens.
- Remove the chicken meat from the bones and chop it randomly.
- Add cilantro to the soup, add salt and pepper if necessary. Cook the soup for another 2 minutes. Turn off the heating.
- Spicy carrot noodle soup is ready. Serve with chicken pieces.
