Spicy Salted Gherkins in a Bag

In the summer, juicy small-fruited cucumbers – gherkins ripen. Their firm flesh is ideal for pickling and salting. If you want a spicy, spicy taste, cucumbers can be pickled in a special way in an hour. I propose a recipe without brine – lightly salted cucumbers in a bag.

Cook: 1 hour

Ingredients

  • Gherkins (small-fruited cucumbers) – 120 g
  • Garlic – 3 cloves
  • Table salt (coarse) – 45 g
  • Cayenne pepper (red) – 5-7 g
  • Cumin – 15 g
  • Rosemary – 2.5 g
  • Bay leaf – 2.5 g
  • White dill – 25 g
  • Black peppercorns – 5 pcs.

Directions

  1. For quick pickling, you will need fresh gherkins and various hot spices: cumin, rosemary, garlic. More salt, dried black peppercorns and hot cayenne, bay leaves, dill. You will also need a vegetable freezer bag.
  2. Before marinating, soak the cucumbers for about 20 minutes. in cold water, saturating them with moisture so that they are well salted.
  3. We take out the gherkins, cut off on both sides, remove all damage.
  4. Put prepared gherkins, spices, dill and cayenne pepper chopped into rings into the bag. The seeds give a pungent taste, if desired – you can remove them, or add pepper without cutting. We tie tightly, distribute the spices evenly.
  5. We keep the cucumbers in a bag warm for up to 30 minutes, then in the refrigerator.
  6. After 20 minutes, you can serve it, there will be a spicy taste, and in 2-3 hours the salted cucumbers in the bag will reach, become crispy, spicy and juicy.
