Ingredients

  • 2 teaspoons, heaped ginger, fresh, finely sliced or grated
  • 100 ml vegetable oil
  • 400 g tuna, sushi quality
  • 2 tablespoon coriander greens, finely chopped
  • 1 chilli pepper (s), pitted and finely chopped
  • 1 tablespoon spring onion (s), finely chopped
  • 3 teaspoons lime juice
  • sea-salt
  • pepper
  • 1 tomato (s), peeled and pitted

Instructions

  1. The day before, soak the ginger in oil and let it steep in the refrigerator. Cut the tuna into small cubes and place in a cold bowl.
  2. Using a tablespoon of coriander, mix the finely chopped chilli pepper, spring onion, 3 teaspoons of lime juice and 4 teaspoons of the ginger oil with the pieces of ginger. Salt and pepper.
  3. Place in the middle of the plate using the serving rings. Drizzle the rest of the ginger oil around the tartare, place the chopped tomato pieces on top, then the rest of the coriander. Drizzle with lime juice.
