Ingredients
- 250 g spinach, fresh
- 1 tablespoon sesame seeds, toasted
- 1 tablespoon sesame paste (tahini)
- 2 tablespoon soy sauce, Japanese
- 2 teaspoons sugar
- 1 teaspoon vinegar (e.g. old master), or better mirin
- Water (salt water)

- Blanch the spinach in salted water and rinse in cold water, then place in a sieve and, after draining, squeeze out more liquid. Mix all remaining ingredients in a bowl. Mix the spinach with the dressing.
- Served as an accompaniment to sushi in small bowls and sprinkled with a few additional sesame seeds. The highlight is definitely the tahini and cannot be replaced!
