Sponge Cake with Marshmallows and Fruits

An ingenious and versatile biscuit. There are a great many cakes based on biscuit cakes. I can boast that the sponge cake, the recipe of which is being offered to your attention, is so good that it would be unfair not to share it with those who have not tried it yet. And to those who have known this wonderful cake with marshmallows and fruits for a long time, just remind them of a simple and delicious delicacy.

Ingredients

  • Eggs – 7 pcs.
  • Sugar – 7 tbsp
  • Flour – 7 tbsp
  • Fat sour cream (thick cream) – 500-700 g
  • Powdered sugar – 5-7 tbsp
  • Vanilla sugar – 5-8 g
  • White marshmallow – 5 pcs.
  • Oranges – 2 pcs.
  • Bananas – 2 pcs.
  • Kiwi – 3-4 pcs.

Directions

  1. Beat the cooled eggs and sugar with a mixer for 15-20 minutes until a fluffy white mass that holds its shape. The first 5 minutes – at low speed, without sugar, and then increase the speed of the mixer and add sugar 1 tablespoon at a time, without interrupting the whipping process.
  2. Preheat the oven (electric – up to 175 degrees, gas – up to 200 degrees). Sifting in small portions, gently stir in flour into the beaten eggs. Stir the dough with a wooden spoon only one way, clockwise, slowly lifting the mass from bottom to top.
  3. Place the dough in a greased pan. Bake in the oven for 35-45 minutes. Do not open the oven! Otherwise, the biscuit will not rise.
  4. Cool the finished biscuit, remove from the mold and cut into two cakes (you can also into three, if you like “wet”, well-soaked cakes).
  5. Beat the sour cream with a mixer with powdered sugar and vanilla. Add powder on a spoon, tasting sour cream for sweetness. This is a delicious sponge cake cream recipe that can be used for any sponge cake.
  6. The first cake can be lightly sprinkled with any fruit juice, and then greased with sour cream.
  7. Cut the marshmallows and fruits into slices and spread evenly in layers. Marshmallow must be immediately used for sour cream, then – oranges, bananas, kiwi.
  8. Cover with a second crust. Lubricate it with cream and garnish with fruit.
  9. Be sure to leave the sponge cake with marshmallows and fruits to soak for several hours (overnight, even for a day) – the more it is soaked, the tastier it will be.
