Squid Marinated with Onions

Who loves seafood, especially squid dishes – the recipe for you! Squids are marinated with onions, but the marinade is an unusual product – cucumber pickle. Both calamari rings and onions are delicious and savory at the same time, in general, it makes an excellent appetizer salad!

Cook: 20 mins

Servings: 2

Ingredients

  • Small squids – 2 pcs. (or 1 large)
  • Bulb onions – 1 pc.
  • Cucumber pickle – 0.75-1 l
  • Sea salt – 1 teaspoon without top

For filing:

  • Sunflower or olive oil – 0.5 tbsp
  • Fresh dill (optional) – to taste

Directions

  1. Prepare all the ingredients you need.
  2. Peel the onions and cut into thin half-rings.
  3. Transfer the onion to a bowl, stir in the sea salt and hand memorize the onion until soft.
  4. Now prepare the squid carcasses. I had already peeled frozen squids that I defrosted completely before cooking.
  5. Slice the squid carcasses into rings.
  6. Add squid rings to onions, stir.
  7. Pour the cucumber pickle into a saucepan and bring to a boil.
  8. Pour half of the boiling brine with the squid and onions.
  9. Immediately discard the onion and squid in a colander, let the brine drain.
  10. Transfer the squid rings and onions back to the bowl. Bring the remaining brine to a boil again and pour over the onion and squid rings. Now let it sit for 5 minutes.
  11. After 5 minutes, fold the onions and squid rings back in a colander, and this time let the brine drain completely.
  12. Transfer the squid rings with onions to a salad bowl, season with sunflower oil. If desired, you can also add fresh, finely chopped dill.
  13. Squid with onions marinated in cucumber brine is ready.
