Ingredients
- 2 tablespoon clarified butter
- 4 steak (s) (variety your choice)
- 4 cl brandy
- 1 tablespoon tomato paste
- 1 tablespoon pepper (grains), green, pickled, with stock
- 250 ml cream
- salt and pepper

- Fry the steaks in hot clarified butter as desired. Set aside in aluminum foil and keep warm.
- Deglaze the roast stock with brandy and stir in the tomato paste. Add the cream and peppercorns. Let the whole thing simmer a little.
- Season to taste with salt and pepper.
