Ingredients

  • 500 g pork fillet (s)
  • 4 tablespoon oyster sauce
  • Pepper, freshly ground
  • 1 small can bamboo shoot (s)
  • 200 g spinach leaves, fresh
  • 3 tablespoon oil, (sesame oil)
  • 1 tablespoon curry paste, yellow (more if you like)
  • 3 teaspoons sugar
  • 3 tablespoon lime juice, freshly squeezed

Instructions

  1. Cut the pork fillet into bite-sized pieces, mix with the oyster sauce and pepper and let stand for about 15 minutes.
  2. Wash and drain the spinach and remove the hard stalks. Drain the bamboo shoots.
  3. Heat the oil in the wok and fry the meat over a high heat while stirring for about 2 minutes. Add the curry paste and mix well. Then add the bamboo shoots and the spinach. Season to taste with sugar and lime juice and simmer for about 2 minutes while stirring. If it is too dry, you can add another sip of water.
  4. Basmati rice or Mie noodles go well with this.
