Ingredients

  • 500 g strawberries
  • 200 ml cream
  • 1 cup sour cream
  • 0.5 ½ cup quark
  • 50 ml syrup (elderflower syrup)
  • 2 packs vanilla sugar
  • 1 packet ladyfingers
  • sugar

For decoration:

  • Elderflower umbels
  • 1 sprig lemon balm
  • Pistachios, unsalted, chopped

Instructions

  1. Wash and clean the strawberries. Save 6 beautiful strawberries with the greens for decoration.
  2. Puree half of the strawberries and add sugar if necessary. Slice some strawberries from the other half and quarter the rest.
  3. For the cream, whip the cream with the vanilla sugar until stiff. Add the sour cream and quark and, depending on your taste, a little sugar. Add about 2 tablespoons of the syrup to the mixture and mix.
  4. Now first put some strawberry puree in the glass (or a baking dish) so that the pureed mass is about 1.5 cm high. Cover the strawberries with ladyfingers and place the strawberry slices on the edge of the glass.
  5. Put the quartered strawberries on the sponge fingers and drizzle everything with a little syrup. Now pour the cream over it until the strawberries on the edge are covered. It is best to let it cool in the refrigerator overnight.
  6. To garnish, cut the remaining strawberries in half and drape them on the cream with elderflower umbels and lemon balm. Finally sprinkle the pistachios over the top.
