Ingredients

  • 1 turkey, (2-5 kg)

For the filling:

  • 8 rolls
  • 2 onion (s), red
  • 1 bunch parsley, smooth
  • 150 grams bacon
  • 500 ml milk
  • 100 g butter
  • salt and pepper
  • nutmeg
  • 4 egg (s)

For the marinade:

  • Oil, (grape seed)
  • salt and pepper
  • 1 pinch (s) paprika powder, noble sweet
  • 1 pinch (s) turmeric
  • 1 pinch (s) rosemary
  • 1 pinch (s) thyme
  • 1 pinch (s) cane sugar
  • 1 orange (s), the peel it

Instructions

  1. First prepare the filling. To do this, cut the rolls into cubes, finely dice the red onions and chop the parsley. Cut the bacon into pieces.
  2. Lightly toss the bacon and onions in butter, add parsley. Pour milk in and simmer gently. Pour it over the bread cubes, season with salt and pepper. It is best to rub the nutmeg freshly over it. Then beat the eggs over it and mix everything with your hands until the mixture is nice and juicy and sticks well.
  3. Make a spice mix from salt, pepper, paprika, turmeric, rosemary, thyme, cane sugar and orange peel. Rub the turkey well with the oil so that the dry marinade sticks well. Then sprinkle the turkey with the spice mixture and press down. Spread the rest of the spice mixture inside. Finally, add the filling to the turkey.
  4. Now pull the turkey onto the rotisserie. To keep the turkey in place, secure it with a wire. Then grill on the rotisserie for about 4.5-5 hours at 170-180 ° C over indirect heat.
